For the Cake:

  • 1 cup pumpkin puree
  • 1 cup applesauce
  • 1/2 cup vegetable oil
  • 1 cup brown sugar

  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

For the Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 12 tbsp milk (as needed)

Instructions

Step 1: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C) and grease a baking sheet to prevent sticking.
  2. In a large mixing bowl, combine the pumpkin puree, applesauce, vegetable oil, brown sugar, granulated sugar, and eggs. Mix until the mixture is smooth and well-blended.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. This ensures even distribution of the leavening agents and spices.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing to keep the cake tender.

Step 2: Bake the Cake

  1. Pour the batter into the prepared baking sheet, spreading it evenly with a spatula.
  2. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cake to cool completely in the pan before frosting.

Step 3: Prepare the Maple Butter Frosting

  1. In a mixing bowl, beat the softened butter until creamy and smooth.
  2. Gradually add the powdered sugar, mixing well to incorporate.
  3. Pour in the maple syrup and vanilla extract, continuing to beat until the frosting is smooth and fluffy.
  4. If necessary, add milk, one tablespoon at a time, to achieve the desired consistency.

Step 4: Frost the Cake

  1. Once the cake is completely cooled, spread the maple butter frosting evenly over the top.
  2. Slice and serve to enjoy the rich flavors of fall in every bite!
