- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
For the Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1–2 tbsp milk (as needed)
Instructions
Step 1: Prepare the Cake Batter
- Preheat your oven to 350°F (175°C) and grease a baking sheet to prevent sticking.
- In a large mixing bowl, combine the pumpkin puree, applesauce, vegetable oil, brown sugar, granulated sugar, and eggs. Mix until the mixture is smooth and well-blended.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. This ensures even distribution of the leavening agents and spices.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing to keep the cake tender.
Step 2: Bake the Cake
- Pour the batter into the prepared baking sheet, spreading it evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan before frosting.
Step 3: Prepare the Maple Butter Frosting
- In a mixing bowl, beat the softened butter until creamy and smooth.
- Gradually add the powdered sugar, mixing well to incorporate.
- Pour in the maple syrup and vanilla extract, continuing to beat until the frosting is smooth and fluffy.
- If necessary, add milk, one tablespoon at a time, to achieve the desired consistency.
Step 4: Frost the Cake
- Once the cake is completely cooled, spread the maple butter frosting evenly over the top.
- Slice and serve to enjoy the rich flavors of fall in every bite!
