Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. Stir until well-mixed.
- Cut in the Butter: Add the cold, diced butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
- Add Apples and Raisins: Gently fold in the diced apples and raisins, ensuring they are evenly distributed throughout the mixture.
- Prepare Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.
- Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring gently with a spatula until the dough begins to come together. Be careful not to overmix.
- Form the Dough: Turn the dough out onto a lightly floured surface and knead gently until it forms a smooth ball. Pat the dough into a circle about 1-inch thick.
