- 2 tbsp olive oil
- Fresh cilantro, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until golden, about 5-7 minutes.
- Stir in sliced onions and bell peppers, cooking for another 3-4 minutes until softened.
- Add corn, cumin, paprika, salt, and pepper, mixing well.
- Sprinkle shredded cheese on top and cover until melted, about 2-3 minutes.
- Garnish with cilantro, if using, and serve warm.
