Cheesy Baja Chicken & Bell Pepper Skillet recipe

  • 1 lb chicken breast, diced
  • 2 bell peppers, sliced (any color)
  • 1 medium onion, sliced
  • 2 cups corn (frozen or canned)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheese (like cheddar or Monterey Jack)
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until golden, about 5-7 minutes.
  3. Stir in sliced onions and bell peppers, cooking for another 3-4 minutes until softened.
  4. Add corn, cumin, paprika, salt, and pepper, mixing well.
  5. Sprinkle shredded cheese on top and cover until melted, about 2-3 minutes.
  6. Garnish with cilantro, if using, and serve warm.
