  • 1 kg (2.2 lbs) of boneless, skinless chicken breast or thighs, cut into cubes
  • 1 cup of plain yogurt
  • 3 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • Juice of 2 lemons
  • 1 tablespoon of tomato paste
  • 1 tablespoon of paprika
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cinnamon
  • Salt and pepper, to taste
  • Wooden or metal skewers

Instructions

Step 1: Prepare the Marinade

  1. Combine Ingredients: In a large mixing bowl, add the yogurt, olive oil, minced garlic, lemon juice, and tomato paste.
  2. Season: Add the paprika, ground cumin, ground coriander, ground cinnamon, salt, and pepper to the mixture.
  3. Mix Well: Stir all the ingredients together until fully combined, creating a smooth marinade.

Step 2: Marinate the Chicken

  1. Add Chicken: Place the chicken cubes into the bowl with the marinade, ensuring each piece is well-coated.
  2. Cover and Refrigerate: Cover the bowl with plastic wrap or a lid, and refrigerate for at least 2 hours, or overnight for best results. This allows the flavors to permeate the chicken fully.

Step 3: Prepare for Grilling

  1. Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
  2. Preheat Grill: Preheat your grill to medium-high heat.

Step 4: Skewer the Chicken

  1. Assemble Skewers: Thread the marinated chicken pieces onto the skewers, leaving space between each piece for even cooking.

Step 5: Grill the Chicken

  1. Grill Skewers: Place the skewers on the preheated grill. Cook for 10-15 minutes, turning occasionally, until the chicken is fully cooked and has a charred exterior.
  2. Check Doneness: Ensure the internal temperature of the chicken reaches 165°F (75°C).

Step 6: Serve

  1. Plate and Enjoy: Remove the chicken from the skewers and serve hot with your choice of sides.
