Different grades of maple syrup (amber, dark, robust) will offer slightly different flavor intensities – use your preference.

    • 1 tablespoon Fresh Coriander seeds, lightly crushed: Fresh coriander seeds are crucial for this recipe. They offer a brighter, more citrusy, and slightly floral aroma compared to ground coriander. Lightly crushing them releases their essential oils and enhances their flavor. You can crush them using a mortar and pestle, a spice grinder for a few seconds, or even by placing them in a zip-top bag and gently rolling over them with a rolling pin or the bottom of a heavy pan.

    • ½ teaspoon Ground Coriander: Ground coriander adds a warm, earthy undertone that complements the fresh coriander seeds and maple syrup. It rounds out the coriander flavor profile.

    • ¼ teaspoon Ground Cumin: Cumin adds a subtle warmth and earthiness that enhances the overall savory-sweet balance of the dish. It pairs beautifully with both coriander and maple.

    • Salt and freshly ground black pepper to taste: Essential for seasoning and bringing out all the flavors. Use kosher salt or sea salt for best results. Freshly ground black pepper adds a pungent and aromatic note.


Instructions

Step 1: Prepare the Carrots and Coriander Seeds

    1. Preheat Oven: Preheat your oven to 400°F (200°C). Preheating the oven to the correct temperature ensures that the carrots roast properly and caramelize effectively.
