Earl Grey Scones with Lemon Glaze recipe

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup brewed Earl Grey tea, cooled
  • 1/2 cup heavy cream (or dairy-free alternative)
  • 1 tbsp lemon zest
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Instructions

  1. Preheat the Oven
    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare the Dry Ingredients
    In a large bowl, mix together the flour, sugar, baking powder, and salt. This will be the base of your scone dough.
  3. Cut in the Butter
    Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingers, cut in the butter until the mixture resembles coarse crumbs. This step is crucial for achieving flaky scones.
  4. Combine Wet Ingredients
    Stir in the brewed Earl Grey tea, heavy cream, and lemon zest. Mix until the ingredients are just combined. Be careful not to overwork the dough.
  5. Shape the Dough
    Turn the dough onto a floured surface. Pat it down to about 1-inch thickness and cut into wedges. You should be able to get about 8 scones from this dough.
  6. Bake the Scones
    Place the scones on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes or until the tops are golden brown. Remove from the oven and let them cool on a wire rack.

    Preparing the Lemon Glaze

    1. Make the Glaze
      In a small bowl, mix the powdered sugar and lemon juice until smooth. The consistency should be thick enough to coat the back of a spoon but still pourable.
    2. Drizzle the Glaze
      Once the scones have cooled, drizzle the lemon glaze over each one. Allow the glaze to set for a few minutes before serving.
