  • 1 (5-7 lb) beef roast (prime rib)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat Your Oven
    Begin by preheating your oven to 450°F (232°C). This initial high temperature will help sear the roast, locking in its juices and flavor.
  2. Prepare the Herb Mixture
    In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper. Mix well to form a fragrant herb paste.
  3. Season the Beef Roast
    Rub the herb mixture generously all over the beef roast, ensuring it’s evenly coated. This will form a flavorful crust as the roast cooks.
  4. Place the Roast in the Oven
    Position the seasoned roast in a roasting pan, bone side down. Place the pan in the preheated oven and roast for 15 minutes to develop a crust.
  5. Adjust the Oven Temperature
    After the initial 15 minutes, reduce the oven temperature to 325°F (163°C). Continue cooking the roast until it reaches an internal temperature of 135°F (57°C) for medium-rare, which should take approximately 1.5 to 2 hours.
  6. Rest the Roast
    Once the desired temperature is reached, remove the roast from the oven and let it rest for 15-20 minutes. This resting period allows the juices to redistribute, resulting in a tender and juicy prime rib.
  7. Slice and Serve
    After resting, slice the prime rib into thick, juicy pieces and serve immediately. Enjoy the rich flavors of garlic and herbs with each bite.
