Grilled Lemon Herb Chicken Skewers recipe

  • Author: Caroline

Ingredients

Scale

For the Marinade:

    • 1/2 cup olive oil: Forms the base of the marinade, helping to tenderize the chicken and carry the flavors. Extra virgin olive oil is recommended for its flavor and health benefits.

    • 1/4 cup fresh lemon juice: Provides the bright, zesty citrus flavor that is central to this recipe. Freshly squeezed lemon juice is essential for the best taste.

    • 2 tablespoons lemon zest: Adds an extra layer of intense lemon flavor and fragrance. Use a microplane or fine grater to zest the lemon, being careful to avoid the bitter white pith.

    • 4 cloves garlic, minced: Adds a pungent and savory note that complements the lemon and herbs. Freshly minced garlic is preferred for its intense flavor.

    • 2 tablespoons chopped fresh rosemary: Provides a woody, piney, and aromatic flavor that pairs beautifully with lemon and chicken. Fresh rosemary is highly recommended, but dried rosemary can be used as a substitute (use 1 tablespoon dried).

    • 2 tablespoons chopped fresh thyme: Adds an earthy, slightly minty, and lemony flavor that enhances the herbal profile of the marinade. Fresh thyme is preferred, but dried thyme can be used as a substitute (use 1 tablespoon dried).

    • 1 tablespoon chopped fresh oregano: Provides a robust, slightly peppery, and aromatic note that adds depth to the marinade. Fresh oregano is preferred, but dried oregano can be used as a substitute (use 1 teaspoon dried).

    • 1 teaspoon salt: Enhances the flavors of all the ingredients and helps to tenderize the chicken. Kosher salt or sea salt is recommended.

    • 1/2 teaspoon black pepper: Adds a subtle spice and depth of flavor. Freshly ground black pepper is recommended for its superior flavor.

    • 1/4 teaspoon red pepper flakes (optional): Adds a touch of heat for those who prefer a slightly spicy kick. Omit if you prefer a milder flavor.

For the Chicken Skewers:

    • 2 pounds boneless, skinless chicken breasts or thighs: Chicken breasts are leaner, while chicken thighs are more flavorful and moist. Both work well for skewers. Cut the chicken into 1-inch cubes for even cooking and easy skewering.

    • Wooden or metal skewers: If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning. Metal skewers can be reused and do not require soaking.

    • Optional vegetables for skewering: Bell peppers (red, yellow, orange, green), red onion, zucchini, cherry tomatoes, mushrooms, pineapple chunks. These add color, flavor, and nutrition to the skewers. Cut vegetables into bite-sized pieces that are similar in size to the chicken cubes for even grilling.

Optional Garnish:

    • Fresh lemon wedges: For serving and squeezing over the grilled skewers for an extra burst of lemon flavor.

    • Chopped fresh parsley or herbs: For garnish and added freshness.

Instructions

Part 1: Marinating the Chicken

    1. Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, chopped oregano, salt, black pepper, and red pepper flakes (if using). Whisk until all ingredients are well combined and emulsified.

    1. Prepare the Chicken: Cut the boneless, skinless chicken breasts or thighs into 1-inch cubes. If using wooden skewers, begin soaking them in water at this time (or at least 30 minutes before grilling).

    1. Marinate the Chicken: Add the chicken cubes to the bowl with the marinade. Toss to ensure all chicken pieces are evenly coated in the marinade.

    1. Marinate in Refrigerator: Cover the bowl with plastic wrap or transfer the chicken and marinade to a resealable plastic bag. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor. Longer marinating times will result in more flavorful and tender chicken. Do not marinate for longer than 4 hours, as the lemon juice can start to break down the chicken protein and make it mushy.

Part 2: Assembling the Skewers

    1. Prepare Vegetables (if using): If using vegetables, wash and chop them into bite-sized pieces that are similar in size to the chicken cubes.

    1. Assemble Skewers: Thread the marinated chicken cubes onto skewers, alternating with vegetables if using. For even cooking, try to keep the chicken pieces and vegetables relatively uniform in size on each skewer. Leave a small space between each piece to allow for even heat circulation.

Part 3: Grilling the Chicken Skewers

    1. Preheat Grill: Preheat your grill to medium-high heat (around 375-450°F or 190-230°C). Clean the grill grates with a grill brush and lightly oil the grates to prevent sticking.

    1. Grill Skewers: Place the chicken skewers on the preheated grill grates. Grill for 8-12 minutes, turning occasionally, until the chicken is cooked through and lightly charred. The internal temperature of the chicken should reach 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of a chicken cube. If using vegetables, ensure they are also tender and slightly charred.

    1. Check for Doneness: To check for doneness without a thermometer, cut into the thickest part of a chicken cube. The juices should run clear, and the meat should be opaque white throughout, with no pink remaining.

    1. Rest (Optional): Once the skewers are cooked through, remove them from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, resulting in more tender and flavorful chicken.

    1. Garnish and Serve: Garnish the Grilled Lemon Herb Chicken Skewers with fresh lemon wedges and chopped fresh parsley or herbs, if desired. Serve immediately and enjoy!
