- Rest the Rice: Once cooked (either method), turn off the heat (or let the rice cooker switch to “keep warm”) and let the rice rest, covered, for at least 10-15 minutes. This allows the grains to finish steaming and become fluffy. Fluff gently with a fork or rice paddle before serving. Remove the pandan leaf.
Part 4: Carve the Chicken and Assemble

- Carve Chicken: Carve the poached chicken into serving pieces. Traditionally, it’s deboned and sliced neatly. You can find many videos online demonstrating Hainanese chicken carving techniques. At its simplest, separate legs and wings, then slice the breast meat.

- Serve: Arrange slices of the poached chicken over a mound of the fragrant rice, or alongside it. Garnish with slices of fresh cucumber and sprigs of cilantro. Serve the chili-garlic sauce and ginger-scallion oil in small individual dipping bowls. Offer a small bowl of the warm, reserved chicken poaching broth (seasoned to taste) as a light soup on the side. A drizzle of dark soy sauce over the chicken is also a popular addition.
