  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (or avocado for a vegan option)
  • 1/4 cup olives (optional)
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine Ingredients: In a large bowl, combine the leafy greens, cherry tomatoes, cucumber, red onion, and olives.
  2. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Dress the Salad: Drizzle the dressing over the salad and toss gently to combine everything evenly.
  4. Top It Off: Sprinkle feta cheese or avocado on top before serving.
