Ingredients
Scale
- 8 oz pasta like fettuccine or penne
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup water
- 1 tsp dried thyme
- 1 tsp balsamic vinegar
- 1 cup shredded cheese like Gruyère or mozzarella
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Caramelize the Onions
In a large pot, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring often. This step is crucial as it develops the deep, sweet flavor characteristic of French onion dishes. - Add Garlic
Stir in the minced garlic and cook for another 1-2 minutes, allowing the garlic to release its aroma and infuse the onions with even more flavor. - Cook the Pasta
Add the pasta, vegetable broth, water, thyme, balsamic vinegar, salt, and pepper to the pot. Bring the mixture to a boil. - Simmer
Reduce the heat and let it simmer uncovered for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and the liquid is mostly absorbed. - Incorporate Cheese
Remove the pot from heat and stir in the shredded cheese until melted and creamy. - Season
Adjust the seasoning if needed and serve the pasta warm, garnished with additional cheese or fresh herbs if desired.
