One Pot French Onion Pasta recipe

  • 8 oz pasta like fettuccine or penne
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup water
  • 1 tsp dried thyme
  • 1 tsp balsamic vinegar
  • 1 cup shredded cheese like Gruyère or mozzarella
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Caramelize the Onions
    In a large pot, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring often. This step is crucial as it develops the deep, sweet flavor characteristic of French onion dishes.
  2. Add Garlic
    Stir in the minced garlic and cook for another 1-2 minutes, allowing the garlic to release its aroma and infuse the onions with even more flavor.
  3. Cook the Pasta
    Add the pasta, vegetable broth, water, thyme, balsamic vinegar, salt, and pepper to the pot. Bring the mixture to a boil.
  4. Simmer
    Reduce the heat and let it simmer uncovered for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and the liquid is mostly absorbed.
  5. Incorporate Cheese
    Remove the pot from heat and stir in the shredded cheese until melted and creamy.
  6. Season
    Adjust the seasoning if needed and serve the pasta warm, garnished with additional cheese or fresh herbs if desired.
