Puff Pastry Breakfast Pizza recipe

  • Author: Caroline

Ingredients

  • Puff Pastry (1 sheet, about 14.1 ounces/400g, frozen): The foundation of our pizza. Opt for an all-butter puff pastry for the most luxurious flavor and flakiness. Frozen puff pastry is readily available and incredibly convenient. Make sure to thaw it properly according to package instructions, usually in the refrigerator overnight or at room temperature for about 30-40 minutes until pliable but still cold. Using high-quality puff pastry is essential for achieving that signature airy, buttery, and crisp crust.
  • Large Eggs (6-8): Eggs form the heart of the breakfast pizza, providing protein and richness. Use large, fresh eggs. Free-range or organic eggs often have richer yolks and deeper flavor. The number of eggs you need will depend on the size of your puff pastry sheet and how many eggs you desire per slice.
  • Shredded Cheese (2 cups, combination of your favorites): Cheese adds flavor, creaminess, and binds the toppings together. A blend of cheeses creates a more complex flavor profile. Excellent cheese options include:

    • Mozzarella: A classic pizza cheese, melts beautifully and provides a mild, milky flavor. Low-moisture mozzarella is best for pizza to avoid excess moisture.
    • Cheddar (Sharp or Mild): Adds a tangy and robust cheesy flavor. Sharp cheddar provides a bolder taste, while mild cheddar is more subtle.
    • Monterey Jack: Melts exceptionally well and offers a mild, buttery flavor.
    • Gruyere: A nutty, slightly sweet, and complex Swiss cheese that melts beautifully and adds a gourmet touch.
    • Pepper Jack: For a spicy kick and creamy texture.
    • Provolone: A mild, slightly nutty Italian cheese that melts well.
    • Parmesan (grated): Adds a salty, umami-rich flavor. Sprinkle it on top for a final flavor boost.
Pre-shredded cheese is convenient, but shredding cheese from a block often yields better melting and flavor.

  • Breakfast Meat (1 cup, cooked and crumbled or diced, choose one or a combination): Protein is essential for a satisfying breakfast pizza. Options include:

    • Bacon: Crispy bacon provides a smoky, salty, and irresistible flavor. Cook bacon until crisp and crumble or chop it.
    • Sausage (Italian, Breakfast, or Chorizo): Adds savory and spiced notes. Remove sausage from casings, cook thoroughly, and crumble or slice. Chorizo will add a spicy kick.
    • Ham (Diced): Diced ham offers a classic breakfast pizza flavor. Use leftover ham, deli ham, or Canadian bacon.
    • Vegetarian/Vegan Options: For vegetarian or vegan breakfast pizza, consider:

      • Plant-Based Sausage Crumbles: Vegetarian or vegan sausage crumbles offer a similar texture and savory flavor to traditional sausage.
      • Roasted Vegetables: Roasted vegetables like bell peppers, onions, mushrooms, and zucchini provide substance and flavor.
      • Black Beans or Chickpeas (seasoned): Seasoned black beans or chickpeas offer plant-based protein and a different textural element.

  • Vegetables (1-2 cups, chopped, choose one or a combination): Vegetables add freshness, flavor, and nutritional value. Consider:

    • Onions (Yellow, White, or Red, thinly sliced or diced): Onions provide a savory base and sweetness when cooked. Red onions offer a sharper flavor and color.
    • Bell Peppers (Red, Green, Yellow, or Orange, diced): Bell peppers add sweetness, crunch, and vibrant color.
    • Mushrooms (Sliced): Sliced mushrooms provide an earthy, umami-rich flavor. Cremini, button, or shiitake mushrooms work well.
    • Spinach or Kale (Chopped): Adds a healthy green element. Sauté spinach or kale lightly to wilt it before adding to the pizza.
    • Cherry Tomatoes (Halved or Quartered): Cherry tomatoes add a burst of sweetness and acidity.
    • Asparagus (Chopped): Adds a slightly bitter and spring-like flavor. Blanch or roast asparagus lightly before adding.

  • Seasonings:

    • Salt and Freshly Ground Black Pepper: Essential for seasoning and enhancing all the flavors. Use kosher salt or sea salt and freshly ground black pepper for the best taste.
    • Garlic Powder (½ teaspoon): Adds a subtle savory garlic note.
    • Onion Powder (½ teaspoon): Enhances the savory flavor and complements the onions.
    • Dried Herbs (½ teaspoon each, optional): Dried herbs like Italian seasoning, oregano, thyme, or rosemary can add extra flavor depth. Choose herbs that complement your chosen toppings.
    • Red Pepper Flakes (optional): For a touch of heat.

  • Optional Toppings and Garnishes:

    • Hollandaise Sauce (for drizzling after baking): Adds richness and a classic brunch touch. Homemade or store-bought hollandaise works well.
    • Hot Sauce (for serving): For those who like a spicy kick.
    • Fresh Herbs (Chopped, for garnish): Fresh parsley, chives, basil, or oregano add a fresh, vibrant finish and visual appeal.
    • Everything Bagel Seasoning (for sprinkling on crust): Adds flavor and texture to the puff pastry crust.

Instructions

  1. Prepare Puff Pastry: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. Gently unfold the thawed puff pastry sheet and place it on the prepared baking sheet. If your puff pastry is very large, you may need to trim it slightly to fit comfortably on your baking sheet.
  2. Pre-bake Puff Pastry: Lightly prick the puff pastry all over with a fork. This prevents it from puffing up too much in the center during pre-baking, creating a flatter surface for the toppings. Bake for 12-15 minutes, or until the pastry is lightly golden brown around the edges and slightly puffed. Pre-baking the puff pastry ensures a crisp crust that can hold the toppings without becoming soggy.
  3. Prepare Toppings While Puff Pastry Pre-bakes: While the puff pastry is pre-baking, prepare your toppings.

    • Cook Breakfast Meat: If using bacon, cook it until crispy and crumble or chop. If using sausage, remove from casings, cook thoroughly, and crumble or slice. If using ham, dice it. Keep warm.
    • Sauté Vegetables (Optional but Recommended): If using onions, bell peppers, mushrooms, or spinach, sauté them in a skillet with a little olive oil or butter until softened and slightly caramelized. Season with salt and pepper. Sautéing vegetables removes excess moisture and enhances their flavor. If using cherry tomatoes or asparagus, you can add them raw or lightly roast them for a few minutes.

  4. Assemble the Pizza: Remove the pre-baked puff pastry from the oven. Gently press down the center of the pastry with the back of a spoon to create a slight well for the egg mixture and toppings, leaving a slightly puffed border around the edges.

    • Layer Cheese: Sprinkle about half of the shredded cheese evenly over the pre-baked puff pastry, covering the base. This layer of cheese will help create a barrier between the pastry and the wet egg mixture, further preventing sogginess.
    • Arrange Toppings: Arrange your cooked breakfast meat and sautéed vegetables (or other chosen toppings) evenly over the cheese layer. Distribute them in a visually appealing manner.
    • Create Wells for Eggs (Optional): If desired, use the back of a spoon to create small indentations or wells in the toppings to nestle the eggs in. This helps keep the eggs from spreading too much.

  5. Prepare Egg Mixture: In a medium bowl, whisk together the eggs, remaining shredded cheese, garlic powder, onion powder, salt, and pepper until well combined. Whisking ensures the seasonings are evenly distributed and the mixture is smooth.
  6. Pour Egg Mixture Over Toppings: Carefully pour or spoon the egg mixture evenly over the toppings and puff pastry, filling the well you created earlier and spreading it to the edges, leaving the puffed border exposed. Be careful not to overfill – the egg mixture should be contained within the puffed pastry border.
  7. Bake the Breakfast Pizza: Return the breakfast pizza to the oven and bake for another 18-22 minutes, or until the puff pastry is golden brown and puffed up, and the eggs are set and cooked through. The egg yolks should be just set but still slightly soft. The baking time may vary depending on your oven and the thickness of your toppings.
  8. Cool Slightly and Garnish: Remove the Puff Pastry Breakfast Pizza from the oven and let it cool on the baking sheet for a few minutes before slicing. Cooling slightly makes it easier to slice and serve. Garnish with fresh chopped herbs like parsley, chives, or basil. If desired, drizzle with hollandaise sauce after baking and slicing.
  9. Slice and Serve: Slice the Puff Pastry Breakfast Pizza into squares or rectangles. Serve warm and enjoy! Offer hot sauce on the side for those who like extra heat.
