- 9 oz tortellini (store-bought, any type)
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the tortellini according to the package instructions, then drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the mushrooms and sauté until they are soft, about 5 minutes. Then, add the spinach and cook until it is wilted.
- In a large bowl, combine the cooked tortellini, sautéed vegetables, marinara sauce, garlic powder, salt, and pepper. Stir well to ensure everything is evenly coated.
- In a baking dish, spread half of the tortellini mixture. Dollop the ricotta cheese on top, then add the remaining tortellini mixture. Sprinkle the mozzarella cheese evenly over the top.
- Bake in the oven for 25-30 minutes, or until the cheese is golden and bubbly.
