Spinach Mushroom Tortellini Bake recipe

  • 9 oz tortellini (store-bought, any type)
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the tortellini according to the package instructions, then drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add the mushrooms and sauté until they are soft, about 5 minutes. Then, add the spinach and cook until it is wilted.
  4. In a large bowl, combine the cooked tortellini, sautéed vegetables, marinara sauce, garlic powder, salt, and pepper. Stir well to ensure everything is evenly coated.
  5. In a baking dish, spread half of the tortellini mixture. Dollop the ricotta cheese on top, then add the remaining tortellini mixture. Sprinkle the mozzarella cheese evenly over the top.
  6. Bake in the oven for 25-30 minutes, or until the cheese is golden and bubbly.
