Instructions
Step 1: Prepare Your Molds
-
Clean and Dry: Make sure your silicone molds are perfectly clean and dry.
-
Arrange for Stability: Place the silicone molds on a flat, sturdy baking sheet or cutting board. This is a crucial step! The molds are flimsy, and the tray will allow you to easily transport the liquid-filled molds to the refrigerator without any catastrophic spills.
Step 2: Bloom the Gelatin
This step is essential for smooth, clump-free gummies. “Blooming” simply means rehydrating the gelatin powder before heating it.
-
Pour the Juice: Pour your chosen fruit juice into the small saucepan. Do not turn on the heat yet.
-
Sprinkle the Gelatin: Evenly sprinkle the 3 tablespoons of unflavored gelatin over the surface of the cold juice. Do not dump it in one spot, as this will create clumps. Let it sit undisturbed for 5-10 minutes.
-
Watch the Magic: During this time, the gelatin will absorb the liquid and “bloom,” becoming wrinkly and then gelling into a substance that looks a bit like applesauce. This ensures every grain of gelatin is hydrated.
Step 3: Brew the Potion
-
Gentle Heat: Place the saucepan over low to medium-low heat.
-
Whisk Constantly: Whisk the mixture gently and constantly as it heats up. The bloomed gelatin will dissolve completely into the juice. This process should only take a few minutes.
-
DO NOT BOIL: It is critical that you do not let the mixture boil. Boiling can weaken the gelatin’s setting power, resulting in soft or sticky gummies. You just want to heat it enough to fully dissolve the gelatin and any sweetener you add. The liquid should be smooth and thin.
Step 4: Customize Your Concoction
Once the gelatin is fully dissolved, remove the saucepan from the heat. Now is the time to add your final magical touches.
-
Add Sweetness and Tang: Whisk in your chosen sweetener (honey or maple syrup) and the lemon juice or citric acid. Start with the lower amount of sweetener, stir, and carefully taste the mixture. Add more if needed.
-
Add Color and Shimmer: If you’re using a light-colored juice like apple, add a few drops of your desired gel food coloring and whisk until the color is uniform. Stir in the edible glitter or pearl dust for that enchanting shimmer.
Step 5: Fill the Molds
-
Work Quickly: The gelatin mixture will begin to set as it cools, so work with purpose.
-
Pour Carefully: Carefully pour the warm gummy mixture into your molds. A liquid measuring cup with a spout works well for controlled pouring. For very small or intricate molds, a food-grade dropper or syringe is the perfect tool to fill each cavity without making a mess.
-
Remove Bubbles: If you see any small air bubbles on the surface, you can pop them with a toothpick for a perfectly smooth finish.
Step 6: The Chilling Spell
-
Refrigerate: Carefully transfer the baking sheet with the filled molds into the refrigerator.
-
Let It Set: Chill the gummies for at least 2-3 hours. For best results and a firmer texture, let them chill for 4-6 hours or even overnight. The gummies are ready when they are firm to the touch and no longer sticky on top.
Step 7: Unveil Your Creations
-
Demold: Once fully set, you can easily remove the gummies. Gently push from the bottom of each silicone cavity to pop the gummies out. They should release cleanly.
-
Admire Your Work: Arrange your spooky, shimmering Witch’s Brew Gummies on a plate and prepare for the delight!
