- Preheat the oven to 400°F.
- Place medium carrots in a bowl; drizzle with olive oil and sprinkle salt. Toss gently until coated.
- Spread carrots evenly on baking sheet and roast at 400°F for 20–25 minutes, turning halfway.
- In a small bowl, whisk pure maple syrup with fresh thyme leaves until fragrant.
- Remove carrots from oven, drizzle the glaze generously and return to oven for 5 minutes.
- Transfer to a warm platter, garnish with black pepper and parsley before serving.
