For the Shrimp & Seasoning
- Pat dry shrimp, toss in a bowl with olive oil and Cajun seasoning until fully coated. Let spices meld for 5 minutes.
- Heat skillet over medium-high heat, add seasoned shrimp, sear 1-2 minutes per side until pink edges curl and flesh turns opaque; transfer to a plate.
For the Rice & Veggies
- Add diced onion and both bell peppers to the same skillet, cooking over medium heat for 3-4 minutes until veggies soften and onions turn translucent.
- Stir in minced garlic and rice, cook for 1 minute until grains look slightly translucent around edges.
- Pour in broth, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
- Return shrimp to skillet, gently fold into rice until reheated; sprinkle with green onions, parsley, and a squeeze of lemon juice before serving.
Notes
For best results, reheat on the stovetop instead of the microwave to keep shrimp tender and rice fluffy.
