Ingredients
  

For the Shrimp and Seasoning
  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning bold blend with smoked paprika, cayenne, and garlic powder
  • 1 tablespoon olive oil for searing
For the Rice and Veggies
  • 1 cup long-grain white rice
  • 1 each bell pepper, red
  • 1 each bell pepper, green
  • 1 medium onion
  • 3 cloves garlic, minced
For Garnish and Finishing Touches
  • 2 stalks green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 each lemon, cut into wedges

Method
 

For the Shrimp & Seasoning
  1. Pat dry shrimp, toss in a bowl with olive oil and Cajun seasoning until fully coated. Let spices meld for 5 minutes.
  2. Heat skillet over medium-high heat, add seasoned shrimp, sear 1-2 minutes per side until pink edges curl and flesh turns opaque; transfer to a plate.
For the Rice & Veggies
  1. Add diced onion and both bell peppers to the same skillet, cooking over medium heat for 3-4 minutes until veggies soften and onions turn translucent.
  2. Stir in minced garlic and rice, cook for 1 minute until grains look slightly translucent around edges.
  3. Pour in broth, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  4. Return shrimp to skillet, gently fold into rice until reheated; sprinkle with green onions, parsley, and a squeeze of lemon juice before serving.

Notes

For best results, reheat on the stovetop instead of the microwave to keep shrimp tender and rice fluffy.
