How to Make Wild Rice Pilaf with Mushrooms and Cranberries
  1. Rinse rice in a fine mesh sieve under cold water until it runs clear.
  2. Combine rinsed wild rice and vegetable broth in a medium saucepan. Bring to a boil, reduce heat, and simmer for 40-45 minutes.
  3. Heat olive oil in a skillet over medium heat, add chopped onion, and cook until translucent, then stir in minced garlic.
  4. Add sliced mushrooms and a pinch of salt, sauté until golden brown.
  5. Gently fold cooked rice into the skillet with mushrooms, stir in cranberries and nuts.
