Aim for ribbons that are about 1/8 inch thick. If using a vegetable peeler, you may need to make a few passes for each ribbon to get the desired thickness. Place the zucchini ribbons in a large bowl. Creating ribbons instead of chunks or slices makes the zucchini more tender and easier to eat in a salad.
- Make the lemon dressing: In a small bowl or jar, whisk together the olive oil, fresh lemon juice, minced garlic, salt, and freshly ground black pepper (and red pepper flakes, if using). Whisk vigorously until the dressing is emulsified and slightly thickened. Emulsifying the dressing ensures that the oil and lemon juice are properly combined, creating a creamy and cohesive dressing that coats the zucchini ribbons evenly.
