Zucchini Tots recipe

Ingredients

    • Zucchini: 2 medium (about 1 pound or 450g total)
        • The Star Vegetable: Choose firm zucchini with smooth, unblemished skin.

    • Sharp Cheddar Cheese (or your favorite cheese): 1/2 cup, shredded
        • The Cheesy Binder: Sharp cheddar adds great flavor. Other good options include Monterey Jack, Colby, Parmesan (use a bit less if it’s very salty), or a blend.

    • Plain Breadcrumbs: 1/4 cup
        • For Binding and Crispness: Regular plain breadcrumbs, panko breadcrumbs (for extra crispiness), or gluten-free breadcrumbs work well. Almond flour can also be used for a low-carb/keto option.

    • Egg: 1 large
        • The Essential Binder: Helps hold the tots together.

    • Onion: 1/4 cup, finely minced or grated (yellow or white onion)
        • Aromatic Base: Adds a savory depth of flavor.

    • Garlic Powder: 1/2 teaspoon (or 1 small clove fresh garlic, minced)
        • Flavor Booster: Complements the onion and zucchini.

    • Salt: 1/4 teaspoon (adjust to taste, especially if your cheese is very salty)
        • Enhances Flavors:

    • Freshly Ground Black Pepper: 1/8 teaspoon, or to taste
        • A Touch of Warmth:

    • Optional Seasonings/Additions:
        • Dried Italian Herbs: 1/2 teaspoon

        • Fresh Parsley or Chives: 1 tablespoon, finely chopped

        • Red Pepper Flakes: A pinch, for a little heat

        • Nutritional Yeast: 1-2 tablespoons for a cheesier, umami flavor (great for dairy-free versions if omitting cheese).

    • Olive Oil Spray or a little Olive Oil: For greasing the baking sheet.


Instructions

1. Prepare the Zucchini (The Squeeze is Key!):

    • Wash and Trim: Wash the zucchini thoroughly and trim off both ends.

    • Shred: Using the coarse side of a box grater or the shredding attachment on a food processor, shred the zucchini.

    • Salt and Rest (Optional but Recommended): Place the shredded zucchini in a colander set over a bowl. Sprinkle lightly with about 1/2 teaspoon of salt (this is extra salt, not the 1/4 tsp from the ingredient list, and will be mostly squeezed out). Toss gently and let it sit for 10-15 minutes. The salt will help draw out excess moisture.

    • SQUEEZE, SQUEEZE, SQUEEZE!: This is the most important step for crispy tots. Whether you salted it or not, transfer the shredded zucchini to the center of a clean kitchen towel (a cheesecloth or several layers of strong paper towels also work). Gather the ends of the towel and twist tightly, squeezing out as much liquid as humanly possible over a sink or bowl. You’ll be amazed at how much water comes out! The drier the zucchini, the crispier your tots will be. You should end up with about 1 to 1.5 cups of tightly packed, squeezed zucchini.

2. Preheat Oven and Prepare Baking Sheet:

    • Preheat your oven to 400°F (200°C).

    • Line a baking sheet with parchment paper for easy cleanup or lightly grease it with olive oil spray or a thin layer of olive oil.

3. Combine Ingredients:

    • In a medium-sized mixing bowl, combine the thoroughly squeezed shredded zucchini, shredded cheddar cheese, plain breadcrumbs, beaten egg, finely minced onion, garlic powder, 1/4 teaspoon salt, and black pepper.

    • If using any optional seasonings like Italian herbs, fresh parsley, or red pepper flakes, add them now.

    • Mix everything together with a spoon or your hands until just well combined. Don’t overmix. The mixture should hold together when pressed.

4. Form the Tots:

    • Take about 1 to 1.5 tablespoons of the zucchini mixture for each tot.

    • Using your hands, roll and shape the mixture into small, compact oblong “tot” shapes, similar to traditional tater tots. Press them firmly so they hold their shape.

    • Arrange the formed tots in a single layer on the prepared baking sheet, ensuring they are not touching (this helps them crisp up).

5. Bake to Golden Perfection:

    • Place the baking sheet in the preheated oven.

    • Bake for 20-25 minutes, flipping the tots halfway through (around the 10-12 minute mark), until they are golden brown, crispy on the outside, and cooked through.

    • Cooking time may vary slightly depending on your oven and the size of your tots.

6. Cool Slightly and Serve:

    • Once baked, remove the Zucchini Tots from the oven and let them cool on the baking sheet for a few minutes. They will firm up a bit more as they cool.

    • Serve warm with your favorite dipping sauce.
