Marinade Preparation
- Mix cumin, coriander, smoked paprika, minced garlic, lemon juice, olive oil, salt, and pepper in a bowl until smooth and fragrant.
Chicken Marination
- Add chicken thighs to the marinade and toss well to coat. Cover and chill at least one hour or overnight.
Cooking Chicken
- Heat a large skillet or grill pan over medium-high heat for about two minutes until shimmering.
- Place marinated chicken pieces in a single layer. Cook 6–8 minutes per side until golden brown and cooked through.
Serving Preparation
- Wrap pita breads in foil and heat in a 350°F oven for 3 minutes or warm briefly in the skillet.
- Fill each warm pita with sliced chicken, drizzle tahini sauce, and top with cucumbers, tomatoes, parsley, and pickled veggies.
Notes
